Gluten-free chickpea patties packed with green veggies and fresh herbs

Quick, tasty, and enjoyed by the whole family. This plant-based version of the typical Portuguese "pataniscas" will not disappoint you!

Hi everyone! It’s Rita here. We’re keeping up with our commitment of bringing you new, vegan recipes on a regular basis now. This one is our take on a typical Portuguese dish and it is exceptionally simple and quick to prepare. We mention it takes 20 minutes to put together, but in reality, you could get this done in under 15 minutes! You could prepare these in advance and keep them in the fridge for 2-3 days and they’re super family friendly. Even kids enjoy these fritters, especially if you add them to sandwiches and wraps (think egg sandwich!) Let us know if you give this a go! Enjoy. :)

Makes 10 fritters

Ingredients
  • 200 g chickpea flour
  • ½ tsp turmeric powder
  • 1 tsp kala namak (black salt) or sea salt
  • 1 tsp black pepper
  • 250 ml water
  • 260 g frozen peas, thawed
  • 1 medium onion, finely chopped
  • 1 medium carrot, peeled and grated
  • 2 garlic cloves, peeled and minced
  • 3 heaped tbsp finely chopped parsley
Instructions

Start by gathering, preparing and measuring all of the ingredients. This will improve your dynamic in the kitchen.

  1. Combine all of the dry ingredients in a bowl and add the water, little by little, ensuring there are no lumps. Fold in the chopped and grated vegetables until they are properly coated in the chickpea batter.
  2. Heat a frying pan lightly coated in olive oil on medium heat. Use a ⅓ measuring cup to pour a portion of the batter onto the pan. Fry each fritter for 3 minutes on one side and 1 minute on the other.
