ENERGY BOOSTING CACAO OATMEAL

This delicious oatmeal has a healthy dose of antioxidants from the raw cacao and berries and loads of energy from the healthy, clean carbs.

Hi guys! It's Rita here. Long time no see, huh? We are two very busy bees and we've been working like crazy for the past two months. Among many other projects, we shot another cookbook for a new client, collaborated a couple of times with a couple of friends of ours, who own this very dear and hip new eatery in town, Madalena. Oh, and let's not forget I finally and successfully defended my master's thesis. We should (will!) work on blog posts to cover all of these great news in the near future.

Since we're freelancers working mostly from home, we're hyped and thankful to have had the opportunities to connect with so many great people and contribute to their inspiring projects. This mindful vegan life of ours has provided us with many good things, and that's what we focus on when we're feeling a little overwhelmed (and even stressed) by all the work and projects we're managing. We keep telling one another we need to make more time for ourselves, for the blog and for our own projects and ideas (believe me, we've got plenty), and that's just what we did the day before yesterday. We shot the recipe we'd been meaning to shoot for several weeks now.

We partnered with Iswari, a portuguese superfoods brand that we've held dear for quite a while now. Lots of their products have guaranteed spots in our pantry ever since we started making the very first changes in our lifestyle and diet. We got ahold of their Buddha's Awakening Cacao raw breakfast mix and created this deliciously filling breakfast that gets us through the coldest mornings. We're working on some other yummy and original recipes using more of their goodies, but this particular oatmeal recipe could not wait any longer. It's a favourite of mine and it's been gathering a lot of attention on my Instagram feed (here, here and here). Here it is folks, we hope you enjoy this as much as we do! In case you can't get your hands on this pretty amazing breakfast mix, just skip it. This porridge recipe works pretty well without it too.

Energy Boosting Cacao Oatmeal

10 minutes
Ingredients
  • 35 g organic rolled oats (choose certified gluten-free if intolerant)
  • 2 tbsp Buddha's Awakening Cacao Hit (optional)
  • 1 tbsp maple syrup
  • 180 ml organic oat milk
  • ½ tsp raw cacao powder
  • ½ tsp guarana powder (optional)
  • 1 tbsp activated buckwheat
TOP WITH
  • fresh berries
  • activated buckwheat
  • desiccated coconut
  • cacao nibs
  • date syrup
Instructions

Start by gathering, preparing and measuring all of the ingredients. This will improve your dynamic in the kitchen.

  1. Mix all the ingredients except for the activated buckwheat in a small saucepan or pot and gently heat it up to a simmer.
  2. Stir while it cooks for 3–7 minutes, depending on how thick you like your oatmeal.
  3. Remove from heat and mix in the activated buckwheat for extra crunch.
  4. Pour onto a bowl and top with your favourite ingredients.
  5. Serve and enjoy while it's still warm.

I just visited your blog by accident, and I'm blown away! Your recipes look delicious, and the photos are really really beautiful (and the illustrations). Hopefully you will have more followers and visitors soon, because that is what you deserve with this amazing content. And now I'm gonna make the vegan parmesan cheese :-)

I am a sucker for anything chocolate, and when it is chocolate in the morning... sign me UP! Love that this breakfast is indulgent, but still healthy with a great energy boost!
